ITALIAN TASTE PUGLIA
The Italian Taste Puglia program is one that we can call our ‘Mini Master Program’. We take all 5 subjects from our 5 week master program, bring in 5 spectacular culinary artists and chefs, put you in a spectacular location and condense it all into 2 weeks. We divide the Italian menu into 5 important topics:
- Italian foundations and raw ingredients
- Artisan pasta
- Artisan breads
- Meat, game and fish and
- Pastry and Desert.
The program combines both hands-on and demonstration lessons, and is not just ‘recipe repetition’ but rather a look at the technique, ingredients and flavour, that make each dish unique. Our Chefs will look at traditional recipes also with their own creative expressions of modern Italian cuisine. Lesson are conducted our professional culinary school, but also with some very important (and exciting) field trips and visits to artisan producers, markets and restaurants to help us better understand what we learn in the kitchens.
