Our programs are taught at two of the most prestigious culinary schools in Italy that encourage continuous research and experimentation, with the purpose of creating innovative top quality products and outstanding performance. These partnerships allow Manuelina Culinary programs to be conducted in English, in locations that are at the forefront of culinary excellence. A prestigious technical and scientific committee ensures the accuracy of the learning programmes.

CAST ALIMENTI – BRESCIA

CAST Alimenti, i.e. “Centro Arte, Scienza e Tecnologia dell’Alimento” (Food, Art, Science and Technology Centre), is a training and specialisation school founded in Brescia in 1996. It is the only centre in Italy providing specific courses in all culinary arts in specially equipped classrooms and laboratories. Vittorio Santoro is the founder and chairman of the school and he has been the school’s chief Operating Officer (COO) right from the start.

The other founder honorary president master Iginio Massari has been a four-time world champion trainer in pastry and chocolate making.

The school is recognised by the Ministry of Education, the University and Research and by the region of Lombardy, furthermore it complies with the ISO 9001 quality system certification and the Code of Ethics.

METRO ACADEMY – MILAN

Metro Academy opened in its San Donato-Milan headquarters at the end of 2014, the metro laboratory is a 16 station brand new state of the art kitchen.

Together with CAST ALIMENTI and two starred scientific director Claudio Sadler and the other partners joining METRO: PlanetOne and AIS Lombardy (Italian sommeliers Association).
